REQUEST FOR MORE SOUTHERN RECIPES: SWEET POTATO PIE

ONE OF MY MOMZONE FRIENDS HAS REQUESTED A SOUTHERN RECIPE, SO THIS ONE IS FOR YOU!
SWEET POTATO PIE
1 PILLSBURY PIE CRUST(SOFTENED)
1 1/2 CUPS OF MASHED CANNED SWEET POTATOES
2/3 CUPS PACKED BROWN SUGAR
1 tsp. GROUND CINNAMON
1/2 tsp. GROUND ALL-SPICE
1 CUP HALF AND HALF
1 TSP. OF LEMON JUICE
2 EGGS BEATEN
SWEETEN WHIPPED CREAM OR WHIPPED TOPPING
DIRECTIONS:
HEAT OVEN TO 425 DEGREES , MAKE PIE CRUST AS DIRECTED
PLACE SWEET POTATOES, BROWN SUGAR, CINNAMON,ALL SPICE,HALF AND HALF, LEMON JUICE AND EGGS IN A BLENDER. COVER AND BLEND TO SMOOTH. POUR INTO CRUST LINED PAN.
BAKE 15 MIN. REDUCE TEMP. TO 350 DEGREES
BAKE 30 TO 40 MIN. LONGER OR UNTIL CENTER IS SET.
COOL COMPLETELY, ABOUT 45 MIN
SERVE TOPPED WITH WHIPPED CREAM AND THEN STORE IN FRIDGE.

THIS IS A GREAT DISH FOR THE HOLIDAYS!
I USUALLY MAKE A COUPLE FOR THANKSGIVING AND A COUPLE OF SOUTHERN SWEET PECAN PIES!
ALSO GREAT WITH STRONG POT OF COFFEE, THIS USUALLY HELPS ME ENJOY THE HOLIDAY'S A LITTLE BETTER BECAUSE I AM SO EXHAUSTED FROM COOKING ALL DAY!

CHICKEN SPAGHETTI





MY KIDS ABSOLUTELY LOVE WHEN I COOK THIS!! MY BAILEE LOVE CHICKEN PREPARED ANYWAY, AND IT IS A GREAT DISH TO HAVE ANYTIME! IT HAS A LOT OF PREP WORK, BUT THE ENDING RESULT IS WORTH IT!! I MADE THIS A LOT FOR MY IN-LAWS WHEN THEY WERE SICK OR HAD SURGERY AND I MADE IT A LOT FOR OUR SINGING TRIPS WE USE TO HAVE!






CHICKEN SPAGHETTI




1 PKG. OF BREAST HALVES BOILED


1 CUT UP YELLOW ONION


2 STALKS OF CELERY


2 STICKS OF MARGARINE


1 CLOVE OF GARLIC


SALT AND PEPPER TO TASTE


DASH OF LEMON PEPPER


DASH OF PARSLEY


DASH OF CREOLE SEASONING(OF COURSE)


DASH OF BASIL


1/2 CUP OF MUSHROOMS


1 CAN OF STEWED TOMATOES


1 JAR OF PIMENTOS


1 LB OF VELVEETA


1 CAN OF CREME OF CHICKEN


1 CAN OF CREME OF MUSHROOM


1 CAN OF CREME OF CERERY


MIX ONIONS,CELERY,BELL PEPPER,BUTTER TOGETHER, SALTEE THIS, THEN ADD MUSHROOMS, PIMENTOS,STEWED TOMATOES, VELVEETA, STIR AND ADD SOUPS, CHICKEN,THEN ADD YOUR SPAGHETTI (COOKED AND DRAINED)


MIX ALL TOGETHER AND POOR INTO A BIG BAKING DISH


GARNISH WITH SHREDDED GRATED CHEESE(SHARP)


BAKE AT 350 DEGREES FOR ONE HOUR

THERE IS NOTHING LIKE GOOD SOUTHERN COLESLAW ON A HOT SUMMER'S DAY!! IT IS GREAT WITH SOUTHERN FRIED CATFISH OR GOOD FOR A SIDE DISH AT A FAMILY REUNION! THIS RECIPE HAS BEEN IN MY FAMILY FOR MANY YEARS!



SOUTHERN STYLE COLESLAW


1PKG. OF COLESLAW MIX

2 GREEN ONIONS (FINELY CHOPPED)

2 STALKS OD CELERY(FINELY CHOPPED)

1 SLICE OF PURPLE ONION(FINELY CHOPPED)

1 SLICE OF BELL PEPPER(FINELY CHOPPED)

1TSP. OF SUGAR

3TSP. OF VINEGAR(I USE RED WINE)

2TSP. OF LEMON JUICE

1 CUP OF MAYONNAISE

SALT AND PEPPER TO TASTE

MIX ALL TOGETHER AND CHILL AT LEAST 2 HOURS

GREAT SERVED WITH A BIG PITHIER OF SWEET SOUTHERN TEA!

THERE IS NOTHING I LIKE BETTER TO DO(BESIDES TAKING CARE OF MY KIDS) THAN COOK. COOKING IS AN RELEASE FOR ME, IT RELAXES ME AND IS HELPFUL TO MY SOUL. I HAVE BEEN COOKING SINCE I WAS 10 YEARS OLD. I CAN STILL REMEMBER WATCHING MY MOM SITTING ON A STOOL IN FRONT OF THE STOVE, STIRRING INGREDIENTS FOR HER FAMOUS BUTTERMILK CANDY! SHE WOULD JUST STIR AND STIR, BECAUSE IT HAD TO BE THE PERFECT TEMPERATURE!! I WILL ALWAYS CHERISH THOSE PRICELESS MEMORIES!! MY MOTHER TAUGHT ME WELL, AND NOW I AM A GREAT COOK. 4 GENERATIONS OF GREAT COOKS IN MY FAMILY!! BAILEE DID HELP ME COOK MY FAMOUS CHICKEN N DUMPLINGS! THE SPECIAL TIMES THAT MY FAMILY SHARES AROUND THE DINNER TABLE MEAN THE WORLD TO ME. WE ALWAYS START OFF WITH A PRAYER OF THANKSGIVING, AND WE "DIVE" IN TO FAMILY CONVERSATION. I CHERISH THIS BECAUSE A LOT OF FAMILIES TODAY DO NOT DO THIS ANYMORE AND IT IS SO SAD BECAUSE THIS IS GREAT FAMILY TIME. I WANT TO KNOW WHAT MY KIDS DID IN SCHOOL THAT DAY, THEIR FREINDS, AND WHAT THEY ATE FOR LUNCH(LOL) NUTRITION IS IMPERATIVE TO OUR FAMILY.WE DO EAT OUT SOMETIMES, MOSTLY DURING BALL SEASON BECAUSE WE ARE ALWAYS RUNNING IN DIFFERENT DIRECTIONS. BUT, FOR THE MOST PART, I COOK. I AM A PERFECTIONIST, AND I ALWAYS WANT EVERYTHING "PERFECT" SAME WITH MY COOKING, BUT I NEVER MEASURE ANYTHING, AND JUST GOES WITH WHAT FEELS RIGHT. I USE MY SOUL, AND THAT'S WHY I CALL IT "SOUL FOOD" IT'S JUST GOOD FOR MY FAMILY'S SOUL. I WILL SOMEDAY HAND DOWN RECIPES,TIPS, AND GOOD OLD SOUTHERN TRADITIONS TO MY BAILEE GRACE, FOR ITS ONLY APPRECIATED AS THE ONES WHO LEARN IT AND USE IT!
