REQUEST FOR MORE SOUTHERN RECIPES: SWEET POTATO PIE

ONE OF MY MOMZONE FRIENDS HAS REQUESTED A SOUTHERN RECIPE, SO THIS ONE IS FOR YOU!
SWEET POTATO PIE
1 PILLSBURY PIE CRUST(SOFTENED)
1 1/2 CUPS OF MASHED CANNED SWEET POTATOES
2/3 CUPS PACKED BROWN SUGAR
1 tsp. GROUND CINNAMON
1/2 tsp. GROUND ALL-SPICE
1 CUP HALF AND HALF
1 TSP. OF LEMON JUICE
2 EGGS BEATEN
SWEETEN WHIPPED CREAM OR WHIPPED TOPPING
DIRECTIONS:
HEAT OVEN TO 425 DEGREES , MAKE PIE CRUST AS DIRECTED
PLACE SWEET POTATOES, BROWN SUGAR, CINNAMON,ALL SPICE,HALF AND HALF, LEMON JUICE AND EGGS IN A BLENDER. COVER AND BLEND TO SMOOTH. POUR INTO CRUST LINED PAN.
BAKE 15 MIN. REDUCE TEMP. TO 350 DEGREES
BAKE 30 TO 40 MIN. LONGER OR UNTIL CENTER IS SET.
COOL COMPLETELY, ABOUT 45 MIN
SERVE TOPPED WITH WHIPPED CREAM AND THEN STORE IN FRIDGE.

THIS IS A GREAT DISH FOR THE HOLIDAYS!
I USUALLY MAKE A COUPLE FOR THANKSGIVING AND A COUPLE OF SOUTHERN SWEET PECAN PIES!
ALSO GREAT WITH STRONG POT OF COFFEE, THIS USUALLY HELPS ME ENJOY THE HOLIDAY'S A LITTLE BETTER BECAUSE I AM SO EXHAUSTED FROM COOKING ALL DAY!
